Are you Scared to Try Something New?

Have you ever stood in the store (because we know not every bottle comes from your favorite winery – wink, wink) and wondered what you were going to enjoy? Most of the time we stick with our tried and true, the favorites, the usuals… but we wanted to try something new.

Craving? Why, yes… Mushrooms… lots and lots of Mushrooms… Lemon… Parmesan…

As you know, we normally drink white wine or rośe. We enjoy fish, veggie heavy dishes and overall lighter meats and cheeses that pair well with white wine. We love a good red, just not as often. Maybe it’s the warm weather? Anyway, we were on the hunt – looking for the perfect Sauvignon Blanc or something similar. “Have you every tried, Grüner?” Brian asked. You don’t necessarily see a lot of Grüner offered in stores, wineries or Restaurants… as it’s an uncommon German variety that is primarily grown in Austria, Hungary, Slovakia and the Czech Republic. The green grape likes cooler climates and packs a punch in higher acid but slightly fuller in body than a Sauvignon Blanc. Tasting notes include.. lemon, lime, nectarine and grapefruit followed by secondary flavors of white pepper, iris, radish and ginger. We thought… let’s give it a whirl. What’s to loose?

We decided to make Mushroom Pasta.. we got every mushroom we could find – King Trumpet, Enokitake, Baby Bella and Oyster Mushrooms. We sautéed with lemon, green onion and topped with a salty, nutty, delectable staple, Parmesan. We went all in – mushroom focused – more mushrooms than pasta. If you haven’t tried the Quinoa pasta, do it, it’s light, great source of fiber and protein. We used a 3-to-1 mushroom to pasta ratio, then using a touch of lemon juice, white wine and a little butter, zest of a lemon, 3 green onions (2 cooked with mushrooms and 1 for garnish) and lots of Parmesan. Just go for it and make it your own – that is best part of cooking! Brian likes to stick with the recipe.. but sometimes it’s better to wing it and try something new.

It was delicious. Yes, both the pasta and the new found favorite wine, Grüner. Next time you’re standing in the wine aisle and you’re asking yourself if you should try it – grab a bottle or two!
